Easter and Restaurants

Wondering if anyone knows if most restaurants will be open on Easter Sunday and if Monday would be even more quiet. For some reason I remember someone mentioning the Monday after Easter as many stores being closed. Any help would be appreciated. Thank you.

Ooops...just saw somewhat of an answer below but it really does not specify restaurants vs stores. I would think that restaurants would be open to serve the residents as well as visitors. Do Dutch laws include restaurants as well?
